GELATO vs. ICE CREAM vs. SORBET: WHAT IS THE DIFFERENCE? Gelato is made with fresh cream and milk, real eggs and natural flavorings. Compared to lesser ice creams which may contain up to 50% air, gelato has no added air at all. This makes gelato a richer, thicker and creamier dessert. And one that won't melt as fast as ice cream!
